Principally it began as a means of preserving the nutrient rich fat and protein in milk for leaner times. Derived from the Latin Caseus it is postulated that early traders may have stored sheep&#8217;s milk in animal stomachs used as storage vessels, the stomach enzyme Rennet transforming the milk in to curds and whey. More can be found <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cheese\">here.<\/a><\/p>\n<p><b>Rennet<\/b> is a complex set of enzymes\u00a0produced in the\u00a0stomachs\u00a0of\u00a0ruminant\u00a0mammals (goats, sheep and cows.) Chymosin, its key component, is a\u00a0protease enzyme\u00a0that\u00a0curdles\u00a0the\u00a0casein\u00a0in\u00a0milk. In addition to chymosin, rennet contains other enzymes, such as\u00a0pepsin\u00a0and a\u00a0lipase. \u00a0Less than 5% of cheese in the world is made using animal rennet today. \u00a0Most cheese is now made using\u00a0chymosin\u00a0derived from bacterial sources.<\/p>\n<p>The need for Humans to preserve food over the centuries has led to a very diverse range of cheeses from all over the World, each with their own tradition and recipes, becoming intertwined in the Culture and identity of the people.<\/p>\n<h4><strong>What you will need<\/strong><\/h4>\n<p>Heavy bottomed saucepan, thermometer, Rennet or vegetarian Rennet, Mesophillic starter culture (For Example<a href=\"https:\/\/www.madmillie.com\/shop\/cheese\/starter-kits.html\"> Mad Millie&#8217;s<\/a> Mesophillic starter culture &#8211; widely available.) Large colander, Cheese cloth.<\/p>\n<p>optional &#8211; a soft cheese mould<\/p>\n<p>To make 250-500g of Soft cheese<\/p>\n<p>4 pints of whole milk, 250mls double cream, 2 drops of liquid Rennet, 1\/8th teaspoon of Mesophillic starter culture, 1\/2 tsp Salt<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5411\" src=\"https:\/\/www.jordansestate.co.uk\/glamping\/wp-content\/uploads\/sites\/2\/2022\/03\/IMG_13333a-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/> <img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-5419\" src=\"https:\/\/www.jordansestate.co.uk\/glamping\/wp-content\/uploads\/sites\/2\/2022\/03\/IMG_13413a-300x285.jpg\" alt=\"\" width=\"315\" height=\"299\" \/><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h4 style=\"text-align: left;\"><strong>Method<\/strong><\/h4>\n<p style=\"text-align: left;\">Place the milk and cream in the heavy bottom pan and gently heat to 30oC (86oF) &#8211; this does not take long so be careful not to overshoot.<\/p>\n<p style=\"text-align: left;\">Remove from heat and add the 2 drops of Rennet and Mesophillic culture and mix thoroughly for 30 seconds<\/p>\n<p style=\"text-align: left;\">Allow to rest over night at room temperature<\/p>\n<p style=\"text-align: left;\">Next morning the curd should have formed, separating from the side of the pan. It should cut cleanly when sliced in the pan with a knife.<\/p>\n<p style=\"text-align: left;\">Cut the curd into 1 inch chunks<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5420\" src=\"https:\/\/www.jordansestate.co.uk\/glamping\/wp-content\/uploads\/sites\/2\/2022\/03\/IMG_13432a-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/> <img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5422\" src=\"https:\/\/www.jordansestate.co.uk\/glamping\/wp-content\/uploads\/sites\/2\/2022\/03\/IMG_13473a-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: left;\">Line a colander in the sink (or baking tray) with the cheese cloth<\/p>\n<p style=\"text-align: left;\">Pour in the curds and whey.<\/p>\n<p style=\"text-align: left;\">Gather up the sides of the cheese cloth and hang over the sink or baking tray at room temperature for 14-16 hours to drain off the whey<\/p>\n<p style=\"text-align: left;\">Once drained &#8211; spoon the creamy soft cheese into a container and add the 1\/2 tsp of salt.
