Pumpkin & Butternut Squash Soup
Don’t throw away your Halloween pumpkin, instead follow this simple recipe to make a warming and healthy soup. Rich in Beta-carotene which is converted to Vitamin A in the body. Pumpkin, butternut squash and sweet potatoes share the same properties as Carrots as in helping you to see in the dark! Vitamin A is required by our eyes for healthy vision as well as being an anti-oxidant clearing harmful free radical build up in the body
Ingredients
1 medium pumpkin
1 butternut squash
2 sweet potatoes
2 large onions
2 cloves garlic
1.5L Chicken/Veg Stock
Crème Fraiche
Squash seeds
Chilli flakes
Method
Cut pumpkin & squash into segments
Peel sweet potatoes
Chargrill or Roast all for 60 mins at 160oC
Dice and fry onions & garlic until softened
Peel squash and pumpkin segments
Place all in a pan with the Stock
Bring to the boil and simmer until needed
Blend thoroughly
Serve with crème fraiche, toasted seeds and chilli flakes
